Nothing beats fresh veggies from your own garden. I have a smaller garden this year than I did last year...being pregnant doesn't allow me to weed and tend to my garden as much as I would like but I have green beans, tomatoes, cucumbers, peppers, and summer squash coming and thats enough for me this year!! My dad has a pretty big garden every year and he always grows LOTS of cucumbers and makes these awesome refrigerator dill pickles which are oh soo yummy and can last in the refrigerator for up to 4 months...meaning we get to enjoy them even past the summer heat!
{Refrigerator Dill Pickles}
Cucumbers
sprig of dill ( or dill seed)
garlic cloves
Brine:
2 qt. water
1/3 cup sugar
1/3 cup salt
2 cups white vinegar
Boil bring mixture for 10 minutes. Cool. Put a sprig of dill ( or one teaspoon dill seed) and 3 to 4 cloves of garlic in the bottom of a quart jar. Pack with sliced or speared cucumbers. Put 3 whole cloves of garlic on top. Pour cooled brine mixture over cucumbers and seal. Refrigerate. Ready to eat in 4 days. Makes 5 tightly packed quarts. DO NOT PROCESS! There is not enough vinegar to keep them outside the refrigerator. They will last 3 to 4 months.
